no bake oatmeal chocolate cookies

Like what I mentioned to my post to my other blog, I may not be celebrating Christmas this year. I am not looking forward to it… with all the fuss that’s going on right now between me, my sister and her bastard husband (forgive me people…but I’m really into a deep madness right now) although I never know yet what that day may bring. But no matter how mad I could become, I still cannot deprive my nieces from experiencing what Christmas is like. So we adults may not be having something to share on the Christmas Eve cause I really don’t plan on preparing anything but discreetly, I am considering of making this no bake oatmeal cookies JK has suggested for me to make just for the little innocent girls.

Here’s what’s needed and how to do it:

Ingredients:

  • 2 cups granulated sugar
  • 1/2 cup evaporated milk
  • 2 tablespoons cocoa (optional)
  • 4 ounces butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (or any kinds of nuts will do although it’s optional)
  • 2 1/2 cups quick-cooking oats

Preparation:

Combine sugar, milk, cocoa and butter in a medium saucepan. Bring to boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat. Stir in vanilla and chopped nuts. Add oatmeal and stir to blend it thoroughly. Dropped by teaspoonful onto waxed paper. Makes about 4 dozens no-bake chocolate oatmeal cookies.

Easy and simple… try it!

still looking for my share of peace

Can someone out there show me where to find it? Or am I just plain dumb choosing not to live life as I should? The more I tried to put everything in place, the more frenzy it gets. I know nothing comes for free on this world. We want something… we work for it and I guess I better be working for more on what I wanted to have in my life instead of asking questions I know no one can answer…

things I am thankful for this year

Be thankful that you don’t already have anything you desire…if you did, what would there be to look forward to?

Be thankful when you don’t know something… for it gives you the opportunity to learn.

Be thankful for the difficult times… during those times you grow.

Be thankful for your limitations… because they give you opportunities for improvement.

Be thankful for each new challenge… because it will build your strength and character.

Be thankful for your mistakes… they will teach you valuable lessons.

Be thankful when you’re tired and weary… because it means you’ve made a difference.

GRATITUDE can turn a negative into a positive. Find a way to be thankful for your troubles and they can become your blessings.

Here, let me single out seven (7) things I am thankful about this year:

  1. On top of the things that I am so thankful about is the going strong and steadfast long distance relationship that JK & I have. It’s been a struggling year for us now and and despite the ups and downs we’re still holding on for each other.
  2. Healthy and happy living for my family back home is what I am praying and thankful for all the time. Knowing that they’re all safe is one big consolation for me.
  3. I am thankful that for almost the entire year I am able to experience life here in Cebu. It’s not the ideal one for me but I like taking the challenge and more so, glad that I am actually continue beating the odds.
  4. I am thankful for the difficult times. They’re a lot to mention but I at least was able to surpass some of those tests I have had for this year.
  5. The job that I just got lately. It’s not the typical job that I’d like to do but the good relationship I have with my co-workers and my boss is what’s keeping me stay. Besides, it helped me financially in anyway.
  6. The new friends and acquaintances. I get to learn lot of things through them.
  7. Lastly, I’m forever thankful I found someone who made me feel so loved and cared for as much as JK does.

Thanks to Amy for passing me this tag… I would also love to know if Dez, Femikey, Janetvicy, Wendy and Lynn don’t mind sharing us the things that they are thankful for about this year.
